The fabulous part? I used some left over zucchini, carrots and onions as well and the richness of the sauce was remarkable. Quartered the tomatoes and other veggies, tossed with olive oil and sea salt, added some garlic cloves, placed on a baking sheet 300-350 degrees for an hour or so (I had 3 pans going so I used the higher temp). Let it cool and then put through a food mill. Delicious.
