Today I was left with 20 or so various tomatoes leftover from the CSA week so I got out Mr Squeezo and we whipped up a sauce today. Potatoes on the table are not going to hold up so a few older round steaks were taken out of the freezer to be slow cooked with potatoes tomorrow.
5 years ago we decided to jump in, head first and learn how to run a 63 acre organic farm. What we weren't expecting was how much this farm would teach us valuable life lessons. This blog is the story of our experiences and learnings.

On my Kitchen Table
Random items from the garden seem to end up on my kitchen table. They all do have something in common- they are usually food items. Mostly leftovers after the CSA for the week is over. Leftover potatoes that are not holding up well that must be eaten soon, little pumpkins and leftover squash I find in the garden. And then a bowl of hardboiled eggs. Seeds- and evidently dental floss is important in our house.

Mmm, what kind of sauce did you make? We're growing lots of tomatoes (well, hopefully) next year to make pasta sauce and hot sauce, but we're still new at this.

Tomato sauce is the simple answer--- I do the tomatoes and put them in the pot and then my husband works his magic adding who knows--- lots of stuff. I added meat as well and canned it. First time that I'll have canned beef.
I made a roasted tomato sauce last weekend that was flat-out the BEST sauce I have ever made. The fabulous part? I used some left over zucchini, carrots and onions as well and the richness of the sauce was remarkable. Quartered the tomatoes and other veggies, tossed with olive oil and sea salt, added some garlic cloves, placed on a baking sheet 300-350 degrees for an hour or so (I had 3 pans going so I used the higher temp). Let it cool and then put through a food mill. Delicious. I'm making more this weekend.

I love that-- i'm making it....
Make sure the pans have low rims otherwise the veggies will just "stew" in their juices rather than roasting. Learned that the hard way.
